A good Peaberry is highly prized in the coffee industry, but is rarely encountered due to its relative rarity. Its uniqueness lies in the fact that this bean receives all the nutritional value that would normally feed two beans.
In the mouth, our Peaberry is clean and sweet, serving up the typical notes of premium Brazilian specialty coffee. Because it is roasted lighter, it greets us with rounded citrus acidity and a medium body. It features notes of caramel, chocolate, cocoa, hazelnuts and honey.
What does PEABERRY actually mean? Coffee cherries usually develop two seeds, with the flat part facing each other. However, in about 5% of coffee cherries, an interesting mutation occurs in which one seed does not develop. Or, to be more precise, one egg cell does not get pollinated. As a result, only one seed is born. This seed has a much higher density and is smaller in shape, but it is also much rounder, as it has enough space inside the coffee cherry to grow on all sides.
